1 small onion, finely chopped
Salt and pepper to taste
8 low-carb tortillas
1 cup shredded lettuce
1 cup shredded cheddar cheese
Dill pickle slices, for garnish
2 tablespoons olive oil
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon finely chopped onion
1 teaspoon white vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 small onion, finely chopped
Salt and pepper to taste
8 low-carb tortillas
1 cup shredded lettuce
1 cup shredded cheddar cheese
Dill pickle slices, for garnish
2 tablespoons olive oil
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon finely chopped onion
1 teaspoon white vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Directions
Preheat your oven to 375°F (190°C).
Brush both sides of the low-carb tortillas with olive oil and cut them in half.
Mold each tortilla half into a muffin tin to form cups and bake for 10-12 minutes or until golden and crispy. Let them cool in the tin.
In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft. Season with salt and pepper. Drain any excess fat.
While the beef is cooking, mix together the mayonnaise, ketchup, mustard, finely chopped onion, white vinegar, garlic powder, onion powder, and paprika in a small bowl to make the homemade Big Mac sauce.
Once the tortilla cups are cool, fill each with a spoonful of the cooked beef mixture.
Top with shredded lettuce, shredded cheddar cheese, and a slice of dill pickle.
Drizzle the homemade Big Mac sauce over the top of each cup.
Serve immediately and enjoy!
Variations & Tips
If you’re aiming for even fewer carbs, you can swap the low-carb tortillas for leafy green lettuce cups. Another fun twist is to add some crumbled bacon on top for extra flavor. A sprinkle of sesame seeds can give an added ‘burger’ feel. For a vegetarian version, substitute the ground beef with crumbled tofu or a plant-based ground meat alternative.
